Unlike Sencha, Gyokuro grows its final days before in shade, usually for the last 20-30 days. The shading increases the amounts of amino acid L-theanine & the alkaloid caffeine in the leaves. The catechins as well as the tannins decrease leaving the tea tasting sweet & full of umami flavors. The process of making Gyokuro was originally invented by Yamamoto Kahei in the 1830’s.
Today Gyokuro is considered one of the most expensive tea types & we understand why, its simply just delicious!
