Matcha is a finely ground powder made from the leaves of the Camelia Sinensis plant. The cultivars most known for high quality matcha in Japan are Okumidori, Yabukita and Samidori, among others.
The C. Sinensis trees are grown in shade to maximize the chloroplasts that gives the leaves their green color, these little friends make sure that the plant can survive through the process of photosyntethis. The greener the leaves, the better quality of matcha tea is produced.
Every leaf is hand picked and then steamed to keep the deep & delicate green color. The producers of this matcha have perfected this process over generations, since the 1800’s.
In this matcha which we call ”Floating bridge of dreams” you will find Okumidori leaves that have been handpicked during the first harvest. This matcha has been grown entirely in the shade, ensuring a very green & smooth cup.
