The delicate cherries are harvested selectively by hand & dried by dehydration using a system of African beds placed inside an oven. The preparation technique is what gives this well-balanced & complex coffee its milk-chocolaty sweetness.

These chocolaty beans are grown in mineral rich volcanic soil at the steep of the highest peak; the Volcano Baru in the northern part of Panama in the Chriqui Province. The farm Baru Black Mountain has received its name due to the black soil it stands on & is committed to environmentally-friendly farming practices as well as taking great care of its workers who can receive medical & educational support for their families.
The farm was founded about 10 years ago when Pedro Rodriguez Escribano, a former entrepreneur in the printing industry decided to move to Panama to start a cattle farm. However Pedros plans evolved as his daughter and her future husband, a German coffee enthusiast helped develop the farm. Presently the Baru Black Mountain farm only grows coffee beans that score 85+ & above according to SCA Q-grade standard.
